Angel Cake with Chocolate Pecan Sauce

Don’t you love it when company comes over unexpectedly and you feel pressured to serve them (at the very least) a cup of coffee and a little something sweet? This easy chocolate pecan sauce is something that you can whip up in minutes and serve over a simple angel food cake to make an impressive dessert in no time at all. You might have many of these ingredients in your pantry and fridge already:

  • 1 tbsp cornstarch
  • 2 tbsp cocoa powder
  • 1.5 cup low fat chocolate milk
  • 1 cup of marshmallows (I recommend the minis)
  • 1 cup sugar
  • 1 tsp vanilla
  • ¼ tsp cinnamon
  • 2 tbsp chopped pecans
  • 1 store bought angel cake (12 oz)

Directions

  1. Mix cornstarch and cocoa with ½ cup of low fat chocolate milk and set aside.
  2. In a saucepan combine half of the marshmallows and the rest of the chocolate milk and place over medium heat. When the marshmallows are almost melted, add the cornstarch and cocoa mixture and stir constantly until thickened.
  3. Add sugar until it incorporates well.
  4. Remove from heat and add vanilla and cinnamon. Let the sauce cool for a few minutes.
  5. Add the rest of marshmallows and the pecans.
  6. Serve over angel cake. Makes 6 servings… enough for an entire cake!

Nutrition Info: 317 calories; 3 g fat; 1 g saturated fat; 5 g protein; 70 g carbohydrate; 153 mg calcium

Chocolate Pecan sauce

With the chocolate milk, marshmallows, and nuts, this sauce reminded me a lot of Rocky Road ice cream! You know, the last bit of melted ice cream that’s left in the bowl that you slurp up. Yum. (Or maybe I’m the only one that does that?) I think it would go really well with chocolate cake as well, but angel food cake is generally pretty low in calories, so serving a rich chocolate sauce over it won’t make you feel quite so guilty!

Speaking of guilt and chocolate, did you know that flavored milk drinkers do not have higher total fat or calorie intakes than non-milk drinkers? And I’m not making this up… it’s a scientific statement from the American Heart Association. Milk drinkers, in general, consume more calcium, phosphorus, magnesium, potassium and vitamin A than non-milk drinkers. Interesting, huh?
